Description
Halo Beriti washing station was established in 2014 and serves 750 small-holder producers. This particular lot is part of a “special preparation” in which hand-sorting was done repeatedly throughout the receiving and drying process to ensure that only perfect coffees made it into the bags. This constant sorting process is what helps make Halo Beriti stand out from other washing stations.
This coffee was depulped the same day it was hand-picked. It was then placed in open-air tanks to ferment for around 12 hours to help loosen up the mucilage that remains on the bean after de-pulping. Once the fermentation is done, it is then washed in water channels to remove the remaining mucilage. The coffee seeds are then spread on raised beds to dry for 5-15 days, depending on the weather.
Yirgacheffe has a great reputation for producing some of the best coffees out of Ethiopia. The vegetation is thick, providing plenty of shade for growing coffee throughout the wet and dry seasons. The multitude of microregions in Yirgacheffe creates complex profiles depending on which washing station the coffee is from. We have purchased coffee from Halo Beriti a few times in the past and it always has great balanced acidity.
