Description
Located in the mountains of Southern Huila, the village of Galilea in Palestina is renowned for its ideal coffee-growing conditions. High elevations, rich volcanic soils, and cool mountain temperatures create an environment that promotes slow cherry maturation, resulting in exceptional sweetness and complexity in the cup. Producer Julián Calderón cultivates Colombia Rosado, a rare and highly sought-after coffee varietal. This varietal is related to Pink Bourbon, which we love.
Julián employs a carefully managed washed process designed to enhance clarity while developing additional fruit complexity. Only over-ripe cherries are harvested, ensuring maximum sugar concentration and fruit development prior to processing. Following harvest, the cherries undergo a 24-hour resting period in the husk. After depulping, the coffee is fermented for 48 hours. During this stage, naturally occurring microorganisms metabolize the remaining mucilage, creating a broad spectrum of organic compounds that enhance the coffee's aromatic profile and fruit expression. Once washed, the coffee is dried slowly in a greenhouse over approximately 15 days. The controlled drying environment protects the coffee from excessive heat and rainfall while allowing moisture to decline gradually, promoting stability and preserving flavor compounds.
