Huila is a well known region in Colombia famous for its production of coffee. Pedro Nel Trujilla Landoño is no exception. This microlot coffee comes from a farm called El Jardin where they spend countless hours a day paying attention to all the detail that goes into producing a stunning coffee. The altitude of 1760 meters above sea level at which this coffee is grown contributes to the density and chemical composition. After harvest, this coffee is washed then fermented for 30 hours. Once fermentation is complete it is then dried under a canopy for 20 days. These growing and production practices contribute to the cleanliness of the cup and its transparency of flavors such as raspberry, raisin and apple pie.
