Description
This year's final Guatemala coffee, before our container of fresh crop Guatemalan coffee gets shipped mid summer, is this Heirloom Bourbon. Our good friend and coffee producing genius, Miguel Medina, has done it again with the incredibly balanced and sweet coffee. The former president of Anacafe (the Guatemala coffee association) Miguel Medina grows a varietal focused, shade covered, wild forest feeling plot of coffee. Miguel is a true pioneer in the coffee industry with his unique coffee production processes. He is not afraid of trying new things.
This Heirloom Bourbon was washed after 38 hours of fermentation. Then it was rested under clean water for 24 hours. It is partially dried on patios, then moved to raised african beds to finish drying. The long fermentation gives this coffee its complex sweetness, while resting under water gives it its balanced and clean finish. When we first tried this coffee we immediately tasted distinct flavors of concord grape and baked apple.

This blend is anchored by a beautiful washed Guatemala farm lot from the Acatenango region. With clean ripe apple, cherry and a chocolate finish this coffee is perfect for espresso. Next, we add 20% of our favorite Brazil coffee, Terra Alta, to add body and sweetness to this perfectly balanced espresso. The blend of the two coffees produces an easy to use easy to drink espresso with balance and loads of complexity and depth

This installment of our Modern American espresso is one of our favorites of the past couple years. The community lot with incredible traceability is blended together with the sole purpose of creating a great and balanced espresso. Due to the high quality of cup profile we are able to roast this coffee in a lighter way that highlights the sweetness and soft fruit character that would be lost in a darker roast.
