Description
La Provincia is a community coffee lot within the department of Nariño, Colombia. This coffee is a blend of various farmer’s coffee within that region. Nariño is well known for producing some of the highest quality coffee in Colombia. Community lots typically produce some well rounded coffee with subtle complexity. This particular coffee is a blend of Colombia, Castillo and Caturra varieties. The elevation at which these coffees are grown are very consistent ranging from around 1,950 to 2,000m. Once harvested, these coffees are collected and processed through a traditional washed processing method. During this process the beans are soaked under water and fermented for 16-38 hours. Once the washing process is complete, they are patio dried for 8-14 days., before being sent off to the dry mill.
Like we said, this coffee is well balanced with subtle complexity. It is easy to brew, sip and enjoy. The flavor notes we get from this coffee is dried mango sweetness with a graham cracker mouth feel.

This blend is anchored by a beautiful washed Guatemala farm lot from the Acatenango region. With clean ripe apple, cherry and a chocolate finish this coffee is perfect for espresso. Next, we add 20% of our favorite Brazil coffee, Terra Alta, to add body and sweetness to this perfectly balanced espresso. The blend of the two coffees produces an easy to use easy to drink espresso with balance and loads of complexity and depth

This installment of our Modern American espresso is one of our favorites of the past couple years. The community lot with incredible traceability is blended together with the sole purpose of creating a great and balanced espresso. Due to the high quality of cup profile we are able to roast this coffee in a lighter way that highlights the sweetness and soft fruit character that would be lost in a darker roast.
